Acetic Acid

Acidulants assist in the setting of gels and to act as preservatives. Many natural foods are acidic. For example, oranges, lemons, apples, tomatoes, cheese and yoghurt contain natural acids, such as citric acid, that give them their characteristically sharp taste.
